Supermarket briquettes give smoke and ash; a kamado is built for large lumps that burn for hours. Marabu is the classic choice — hard wood, little ash, and what is left over gets reused next time.

Kamado Joe
Three grate heights, and a price to match
€2,199.00
Too few measurements yetWe have only recently started tracking this price. Once we have measured enough days, this will say whether now is a good moment.
The Classic III adds a third tier to the Divide & Conquer system and ships it complete with cast iron and half-moon inserts. In practice that means searing low down, cooking in the middle and holding warm up top, all at once.
Whether that is worth five hundred euros more than a Classic II depends entirely on how you cook. Anyone who entertains and serves in rounds will use those tiers. Anyone who puts a joint on and shuts the lid is paying for something that sits in a cupboard.
Watch the configuration. This is sold both as a Stand-Alone and in a starter pack, and on bol the pack with accessories is regularly cheaper than the bare barbecue — see below.
Who it suits: Anyone cooking for groups who wants several dishes going on one barbecue.

These versions are the same kamado in a different make-up — usually with or without a stand, sometimes with accessories added. Prices vary widely and the cheapest is not always the bare one, so it pays to look at all of them.
This is what we know for certain. Measurements the manufacturer or the shop does not state are left out rather than estimated — a grate size or a weight that is not there is one we do not have.

EssentialWood-wool lighters rather than fluid or chemical cubes. Lighter fluid is something you taste for the first hour, and in a kamado that flavour sits in the ceramic where it does not come out again.

Indirect cooking
EssentialWithout a deflector the meat sits straight over the fire and a kamado is an expensive grill. The deflector turns it into an oven, which is what low and slow rests on. Check whether your complete set already came with one.

Measuring
RecommendedThe gauge in the lid measures the air at the top of the dome, not the meat and not the grate. For anything taking more than an hour, core temperature is the only number that counts.

Protection
RecommendedThe size that fits almost every medium and large, including most models with side shelves. To be safe, measure the width across the shelves rather than the diameter of the ceramic.

Maintenance
RecommendedAsh in the base blocks the bottom vent, and a kamado that gets no air holds no temperature. A hook that reaches the back of the firebox is the difference between two minutes of work and half a teardown.

Maintenance
Can waitThe felt between dome and base wears, and a kamado drawing air past the lid can no longer be held at a low setting. This is the part that comes due after a few years, and it is replaceable without tools.

Baking
Can waitA kamado reaches the temperature that cooks a pizza in three minutes without effort; what is missing is a stone that bakes the base along with it. This one is cut to the Classic size.
