What to look out for

The dangerous moment with a kamado is not lighting it but opening it. A dome full of hot smoke that suddenly gets oxygen flashes back, and it does so at face height. Open it a centimetre first, wait, then lift: that is the habit that saves your hands and your eyebrows.

Watch what is being promised. These are rated to 200 °C, which is a more honest figure than the 500 °C you see elsewhere: that one is usually measured in a way that says nothing about holding a grate for a few seconds.
